Cooking lesson – week one: Shortbread and Gingerbread

Today with my beautiful assistant Melanie I learned how to make Gingerbread and shortbread. I will say I only needed assistance cooking the gingerbread mix on the hob, putting the biscuits on trays and using the icing bag.

Here’s what you need to make the gingerbread:

  • 40grams of unsalted butter
  • 2 table spoons of ginger
  • 20 grams of brown sugar
  • 40grams of flour
  • Golden syrup

Mix all dry ingredients in a bowl then put the butter and golden syrup in a small saucepan on the hob and stir until bubbling then leave the mixture to cool for five minutes. Form your mixture into a ball and roll out and then using cookie cutters cut 8 gingerbread shapes out and place them on a buttered baking tray, set the oven to gas mark 4 or 350 degrees Fahrenheit and then bake for 15 minutes.

Whilst they are baking you can make your icing. All you have to do is gather some flour, water and icing sugar into a paste and then put into your piping bag.

Once the gingerbread has cooled down you can decorate them however you like For the gingerbread men you want to carefully outline their face, buttons, arms and legs (we added a jellybean nose and a sprinkling of popping candy.

and, if you turn a gingerbread man upside down you have a reindeer! All you need to do is draw their antlers as tree branches and a happy face!

Best served with a warm drink drank by a roaring fire (Or you could make do with a heated blanket.)

Today was so much fun! It was nice to do something different and I’m not gonna lie it was hard to make a mess, just go with it and that perfection is not the goal here fun, physical exercise and learning a life skill is.

It was lovely to have accomplished something that takes a lot of patience and energy for me and learning basic living skills. (which is something I’ll always battle, let’s be realistic!) it felt good to take my mind off of things and now I can reap the rewards.

I have to say though Melanie, you are the best friend I could ever ask for and my 2019 will be ending on high note with all you’ve helped me achieve. (As well as my family of course that goes without saying!)
